Ingredients

  • 1 egg, beaten
  • 1 (12 oz.) can corn (whole kernel)
  • 1 (4 oz.) pkg. Cheddar cheese, shredded
  • 1 (7 or 8 1/2 oz.) pkg. corn muffin mix
  • 1 small pack small smoked sausage links

Instructions

  1. Preheat oven to 400°. Grease an 8-inch pan. Put egg, corn (undrained) and 1/2 cup cheese in a bowl; mix well. Add dry muffin mix. Stir until mixed (batter will be thick). Pour into dish; arrange sausage links on top of batter. Bake for 30 minutes or until top is golden. Sprinkle on remaining cheese. Let stand 5 minutes before serving. Cut into squares.
