Ingredients

  • 1 gal. daikon, peeled and sliced
  • 3/4 c. Japanese vinegar
  • 3 1/2 c. white sugar
  • 1/4 c. Hawaiian salt

Instructions

  1. Peel and slice the daikon and place it in a gallon jar.
  2. Add Japanese vinegar, white sugar, Hawaiian salt, and yellow food coloring to the jar.
  3. Close the jar and shake it to mix the ingredients.
  4. Place the jar in the refrigerator.
  5. The next day, add more daikon to the jar and shake again to marinate.
  6. Keep in the refrigerator and wait for 1 week before eating.
