Ingredients

  • 1 lb. soup meat with bone
  • 8 cups cold water
  • 1 teaspoon salt
  • 2 medium beets, diced
  • 1 medium onion, chopped
  • 2 cups shredded cabbage
  • 1/2 cup tomato juice or lemon juice
  • 1/2 clove garlic, crushed
  • 1 small stalk celery, diced
  • 1/2 small carrot, diced

Instructions

  1. Cover the soup meat with cold water in a large pot.
  2. Add 1 teaspoon of salt, bring slowly to a boil, and skim off any foam.
  3. Cover and simmer for about 1 hour.
  4. Add the diced beets, chopped onion, shredded cabbage, diced celery, and diced carrot.
  5. Continue simmering for another hour.
  6. Pour in 1/2 cup of tomato juice or lemon juice.
  7. Add crushed garlic if desired.
  8. Season with additional salt and pepper to taste.
  9. Bring the mixture to a boil again.
  10. Let the borsch stand for a while if time permits to blend flavors.
  11. Strain through a sieve to clarify.
  12. Serve hot or cold with a dollop of sour cream.
