- Chop the semi-sweet chocolate.
- Combine the chopped chocolate and heavy cream in a saucepan over low heat.
- Stir constantly until the cream boils.

- Press plastic wrap directly on the surface of the chocolate to prevent skin formation.
- Refrigerate until the mixture is firm, about 2 hours, or freeze for 30 minutes.
- Shape the chilled mixture into 1-inch balls.
- Roll the chocolate balls in unsweetened cocoa powder.
