Ingredients

  • 3/4 c. brown sugar
  • 2 egg whites
  • 1/2 tsp. vanilla extract
  • 2 c. chopped pecans
  • 1 c. coconut
  • pinch of salt

Instructions

  1. Beat egg whites to form
  2. soft peaks.
  3. Gradually beat in brown sugar, vanilla and salt.
  4. Fold
  5. in
  6. pecans
  7. and coconut. Drop by teaspoon onto a greased
  8. cookie
  9. sheet one inch apart. Bake at 325° for 20 minutes.
  10. Turn off oven heat and let stand in the oven for 20 minutes more.
