Ingredients

  • 1 egg, separated
  • 2 Tbsp. sugar
  • 3 Tbsp. Minute tapioca
  • 2 c. milk
  • 1/8 tsp. salt
  • 2 Tbsp. sugar

Instructions

  1. Beat the egg and separate the whites from the yolk.
  2. Whisk the egg whites until foamy.
  3. Add 2 tablespoons of sugar to the whites and continue beating until they form stiff peaks. Set aside.
  4. In a saucepan, combine the egg yolk, tapioca, milk, salt, and 2 tablespoons of sugar.
  5. Cook and stir over medium heat until the mixture comes to a full boil, about 4 to 5 minutes.
  6. Remove from heat.
  7. Slowly pour the hot mixture into the meringue mixture, blending well.
  8. Add vanilla and mix thoroughly.
  9. Let stand for 15 to 20 minutes.
  10. Serve warm.
