Ingredients

  • 1 egg, separated
  • 3 Tbsp. sugar
  • 1/8 tsp. salt
  • 2 c. milk
  • 3 Tbsp. Minute tapioca
  • 2 Tbsp. sugar

Instructions

  1. Combine egg yolks, 3 tablespoons sugar, salt, milk, and tapioca in a 1 1/2-quart casserole.
  2. Let stand for 3 minutes to soften tapioca. Then place in the microwave.
  3. Microwave for 8 to 10 minutes on setting '8' or until mixture thickens, stirring twice during cooking.
  4. Beat egg white until foamy in a 2-quart bowl.
  5. Gradually beat in 2 tablespoons sugar, continuing to beat until soft peaks form.
  6. Carefully fold in the cooked tapioca into the egg whites.
  7. Stir in vanilla extract.
  8. Chill before serving.
