- Combine egg yolks, 3 tablespoons sugar, salt, milk, and tapioca in a 1 1/2-quart casserole.
- Let stand for 3 minutes to soften tapioca. Then place in the microwave.
- Microwave for 8 to 10 minutes on setting '8' or until mixture thickens, stirring twice during cooking.
- Beat egg white until foamy in a 2-quart bowl.
- Gradually beat in 2 tablespoons sugar, continuing to beat until soft peaks form.
- Carefully fold in the cooked tapioca into the egg whites.
- Stir in vanilla extract.
- Chill before serving.
