Ingredients

  • 5 lb. flour
  • 6 tsp. salt
  • 1/2 tsp. black pepper
  • 2 tsp. fennel seed, soaked in water and drained
  • 2/3 c. vegetable oil
  • 1 cake yeast, softened in 1 c. warm water
  • 3 c. water

Instructions

  1. Sift flour into large bowl.
  2. Add salt and pepper.
  3. Make well in center. Add
  4. water,
  5. fennel
  6. seed, oil and yeast; mix well. Turn dough onto table;
  7. knead about 20 to 25 minutes to macaroni dough consistency. Form
  8. into
  9. loaf.
  10. Divide
  11. into 3 parts and place in bowl
  12. or pot;
  13. cover.
  14. Let dough rest about 15 to 20 minutes or more.
  15. Cut off small pieces and bake about a dozen coils.
  16. Form
  17. pretzels
  18. shape; press ends down.
  19. Place in fast boiling water
  20. for about 1 minute. Remove immediately when they float.
  21. Place
  22. in
  23. colander
  24. in
  25. cold water.
  26. Remove colander from water.
  27. Place
  28. taralles on clean cloth.
  29. Bake on open oven rack at 400° for 20 minutes or until brown.
