"Tater" Candy

Sweet and creamy peanut butter-filled potato candies with a soft, dough-like texture, perfect for a nostalgic treat or a fun homemade gift.

Ingredients

  • 1 medium potato
  • 1 1/2 to 1 3/4 boxes powdered sugar
  • 1 jar peanut butter

Instructions

  1. Boil the potato until well done.
  2. Mash a small portion of the potato with a fork.
  3. Add a small amount of powdered sugar to the mashed potato.
  4. Alternate adding potato and sugar until all has been mixed well.
  5. Mix until the dough has the look of bread dough.
  6. Sprinkle powdered sugar on a cookie sheet or wax paper.
  7. Roll out the dough thin on the sugar, then spread a layer of peanut butter on top.
  8. Roll the layered dough into a log shape and cut into bite-sized pieces.
  9. Refrigerate the candies for a while before serving.
