Ingredients

  • 1 egg white
  • 1/3 cup sugar
  • 3 tablespoons Minute tapioca
  • 2 cups milk
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1/2 cup teaberry candies
  • Cool Whip (optional)
  • coconut (optional)

Instructions

  1. Beat egg white until foamy; gradually beat in half the sugar and continue beating until mixture forms soft rounded peaks.
  2. Mix tapioca, remaining sugar, milk, egg yolk, and teaberry candies in a saucepan.
  3. Let stand for 5 minutes.
  4. Cook and stir tapioca mixture over medium heat until it comes to a full boil and thickens.
  5. Gradually add the hot tapioca mixture to the egg white mixture, stirring quickly until just blended.
  6. Stir in vanilla.
  7. Cool for 20 minutes.
  8. Stir the pudding.
  9. Serve warm or chilled, optionally with Cool Whip and coconut.
