Teff Skillet Flat Bread

Ingredients

  • 1 c. teff flour (available at Newark Co-op)
  • 1 tsp. baking soda
  • 1 1/2 c. buttermilk
  • 1 c. water or as needed
  • 2 tsp. safflower or canola oil

Instructions

  1. In a mixing bowl, combine flour with baking soda.
  2. Stir in buttermilk, then add enough water to give the mixture a fairly thick yet fluid consistency.
  3. Stir in oil.
  4. Heat a 6-inch nonstick crepe pan until sizzling hot.
  5. Pour in a scant 1/4 cup of batter and quickly tilt pan to form a round.
  6. Cook until golden brown on each side; repeat with remaining batter.
  7. Makes 12 to 14 pancakes. Delicious with stews and chili.
