- In a mixing bowl, combine flour with baking soda.
- Stir in buttermilk, then add enough water to give the mixture a fairly thick yet fluid consistency.
- Stir in oil.
- Heat a 6-inch nonstick crepe pan until sizzling hot.
- Pour in a scant 1/4 cup of batter and quickly tilt pan to form a round.
- Cook until golden brown on each side; repeat with remaining batter.
- Makes 12 to 14 pancakes. Delicious with stews and chili.
