Ingredients

  • 1 1/2 cups shredded Monterey Jack cheese with jalapeno peppers
  • 1 (6 oz.) package Stove Top chicken flavor or cornbread stuffing mix
  • 1 2/3 cups water
  • 1/4 cup Parkay margarine
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 2 tablespoons vegetable oil
  • 2 cups shredded, cooked turkey or chicken
  • 1 small tomato, chopped
  • 1 (7 oz.) can whole kernel corn, drained
  • 3/4 cup picante sauce (medium)

Instructions

  1. Preheat oven to 375°F.
  2. Prepare stuffing according to package directions, using water and margarine.
  3. Spoon the prepared stuffing into the bottom of a greased 11 x 7-inch baking dish.
  4. In a skillet, heat vegetable oil and sauté chopped onion and green pepper until tender.
  5. Mix cooked turkey or chicken with sautéed vegetables, chopped tomato, drained corn, and picante sauce.
  6. Spread the turkey mixture evenly over the stuffing in the baking dish.
  7. Sprinkle shredded Monterey Jack cheese with jalapeno peppers over the top.
  8. Bake in the preheated oven for about 30 minutes or until cheese is melted and bubbly.
