Texas Firecrackers are spicy, cheesy bites featuring pepperoncini peppers stuffed with Monterey Jack cheese and chicken, then wrapped in flaky phyllo pastry for a flavorful appetizer.

- Select 24 (2-inch long) salad peppers; set aside any extras for garnish.
- Remove stems and seeds from peppers; drain thoroughly on paper towels.
- Stuff each pepper with 1 piece of Monterey Jack cheese and 1 piece of cooked chicken.
- Wrap each stuffed pepper with a sheet of thawed phyllo pastry.
- Lightly spray each wrapped pepper with butter-flavored cooking spray.
- Arrange on a baking sheet and bake at 375°F (190°C) for about 15 minutes or until golden brown.
- Optional: garnish with fresh long chives before serving.
