Texas Firecrackers are spicy, cheesy bites featuring pepperoncini peppers stuffed with Monterey Jack cheese and chicken, then wrapped in flaky phyllo pastry for a flavorful appetizer.

Ingredients

  • 2 (22 oz.) jars pepperoncini salad peppers, drained
  • 6 oz. Monterey Jack cheese with peppers, cut into 24 rectangles
  • 1 (6 oz.) chicken breast half, cooked and cut into 24 pieces
  • 24 sheets frozen phyllo pastry, thawed
  • butter-flavored cooking spray
  • 48 fresh long chives (optional)

Instructions

  1. Select 24 (2-inch long) salad peppers; set aside any extras for garnish.
  2. Remove stems and seeds from peppers; drain thoroughly on paper towels.
  3. Stuff each pepper with 1 piece of Monterey Jack cheese and 1 piece of cooked chicken.
  4. Wrap each stuffed pepper with a sheet of thawed phyllo pastry.
  5. Lightly spray each wrapped pepper with butter-flavored cooking spray.
  6. Arrange on a baking sheet and bake at 375°F (190°C) for about 15 minutes or until golden brown.
  7. Optional: garnish with fresh long chives before serving.
