Ingredients

  • 1 cup chopped onion
  • 1 stick soft butter
  • 1/4 cup water or soy sauce
  • 10 oz chicken broth
  • 1 cup flour
  • 2 1/2 cups chopped cooked chicken
  • 1 (10 oz) package frozen mixed vegetables
  • 3/4 cup noncooked quick oats oatmeal
  • 2 tablespoons baking powder
  • 1/2 cup milk
  • 1 egg white
  • salt

Instructions

  1. Preheat oven to 475°F.
  2. Cook chopped onion in 2 tablespoons of butter until soft.
  3. Add water or soy sauce, chicken broth, 1/4 cup flour, salt, pepper, and garlic to the onion; cook approximately 3 minutes until thickened.
  4. Stir in frozen mixed vegetables and chopped cooked chicken.
  5. Pour the mixture into a 2-quart casserole dish.
  6. Combine remaining 1 cup flour, quick oats, and baking powder in a bowl.
  7. Cut in butter until the mixture is crumbly.
  8. Stir in milk and egg white until moistened.
  9. Drop spoonfuls of the oatmeal mixture on top of the chicken mixture.
  10. Bake for 30 to 45 minutes until the topping is golden brown.
