Texas Tofu

Instructions
- Beat eggs with tamari.
- Slice tofu in 1/2-inch thick slices. Dip in egg mixture, then bread with wheat germ.
- Flash fry in oil in nonstick pan. Turn once.
- Lower heat.
- Pour remaining egg mixture over tofu slices.
- As soon as it's set, sprinkle cheese over top. Cover and turn off heat.
- Warm chili. As soon as cheese is melted, slide entire tofu dish onto platter.
- Top with chili. Serve with lettuce, tomatoes, avocado, raw onions, grated cheese and salsa.
