Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 c. butter, softened
  • 3/4 c. grated unbleached almonds
  • 2 tsp. vanilla

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. With a fork or pastry cutter, blend softened butter into the flour, sugar, and salt until well combined.
  3. Add grated almonds and vanilla, mixing until incorporated.
  4. Form dough into small balls and place on an ungreased baking sheet.
  5. Make an indentation in the center of each ball using your thumb or a small spoon.
  6. Bake in the preheated oven for about 12 minutes or until lightly golden.
  7. Allow cookies to cool before filling the centers with jam or icing if desired.
