Ingredients

  • 1 tsp. thyme
  • 1/2 c. boiling water
  • 1 1/2 c. unsweetened grape juice
  • 2 tsp. lemon juice
  • 3 c. honey

Instructions

  1. Make an infusion of thyme and boiling water.
  2. Strain the infusion and add enough water to make half a cup.
  3. Combine the thyme infusion, unsweetened grape juice, lemon juice, and honey in a large saucepan.
  4. Bring the mixture to a full rolling boil and add pectin, stirring constantly.
  5. Boil hard for 30 seconds and perform a sheet test to check for jellying point.
  6. Remove from heat and skim off any foam or impurities.
  7. Pour the hot jelly into sterilized glasses and seal.
