Ingredients

  • 2/3 c. sugar
  • 6 egg yolks
  • 2 whole eggs
  • 2 cans condensed sweetened milk
  • 2 cans evaporated milk
  • 1 1/2 tsp. vanilla or juice of 1 orange or lemon or lime "zest optional"

Instructions

  1. In a saucepan over medium-high heat, melt 2/3 cup of sugar. Have patience and keep stirring.
  2. All lumps will dissolve with time.
  3. Coat a pan of your choice (could be a Pyrex in an interesting shape or a smooth Bundt pan.
  4. I use a simple stainless steel mixing bowl so that is comes out round) with the melted sugar.
  5. Coat the pan well!!
  6. In a small bowl, whisk 6 egg yolks and 2 whole eggs.
  7. In a large bowl, combine 2 cans of condensed sweetened milk with 2 cans of the evaporated milk.
  8. Add the eggs. At this time, add vanilla.
  9. Pour mixture into prepared pan.
  10. Take a roasting pan.
  11. Pour 2-inches of water into it and set the flan in the middle.
  12. Bake your flan in an oven that has been preheated to 350°.
  13. This can take anywhere from 1 to 2 hours depending on your oven.
  14. Test your flan for doneness with a toothpick inserted into the middle.
  15. It's ready when it comes clean.
  16. Carefully remove your flan by lifting the bowl out of the pan.
  17. Chill well (6 hours minimum, you can make it the night before).
  18. To remove slide a butter knife around the edge.
  19. Invert the pan onto your serving plate (a large plate or a plate with a lip).
  20. Remember the caramel runs off.
  21. Get all of it on the plate.
  22. Yields 12 servings.
