Tofu Guacamole

Ingredients

  • 1 large ripe avocado (5-inch long)
  • 1/2 lb medium- soft tofu (2 cakes)
  • 1/2 teaspoon salt
  • black pepper
  • cayenne pepper
  • 1 medium garlic clove, crushed
  • 1/4 teaspoon ground cumin (more to taste)

Instructions

  1. Mash all ingredients, except parsley, with a fork.
  2. After mashing, beat well with fork (vigorously) or whisk until smooth and uniform.
  3. Arrange nicely in a serving bowl. Top with parsley.
  4. Cover tightly and chill.
