Tomato Aspic Mold

A refreshing tomato aspic mold with tangy tomato flavor, topped with crisp lettuce, perfect as an elegant appetizer or chilled starter for warm gatherings.

Ingredients

  • 2 Tbsp. unflavored gelatin
  • 1 c. cold tomato juice
  • 3 c. hot tomato juice
  • 1 Tbsp. grated onion
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. Worcestershire sauce

Instructions

  1. Soften the gelatin in cold tomato juice.
  2. Pour the mixture into hot tomato juice and stir until the gelatin is dissolved.
  3. Add grated onion, lemon juice, salt, and Worcestershire sauce to the mixture and blend well.
  4. Pour the mixture into a 5-cup ring mold.
  5. Chill until the gelatin is firm.
  6. Unmold onto a chilled serving plate and trim with lettuce.
