Tomato-Pepper Saute

Ingredients

  • 6 large green peppers, cut in 1/4-inch strips
  • 2 medium onions, chopped
  • 1/4 c. vegetable oil
  • 4 large tomatoes, peeled and cut into wedges
  • 1 tsp. salt
  • 1 1/4 tsp. dried basil

Instructions

  1. Saute
  2. green peppers and onions in oil over medium heat for 10 minutes.
  3. Add
  4. remaining
  5. ingredients, stirring well. Cover, reduce
  6. heat
  7. and
  8. simmer 15 minutes.
  9. Yields 10 to 12 servings.
