Tomato-Pepper Thighs

- Remove skin from chicken thighs.
- In a medium pan over medium-high heat, brown chicken thighs in oil for 5 minutes, turning once. Remove to a plate.
- Add onions, green and red peppers, and red pepper flakes to the drippings in the pan.
- Cook over medium heat, stirring frequently, for 5 minutes.
- Add stewed tomatoes, black olives, and a pinch of salt to the pan.
- Stir the mixture to break up the tomatoes.
- Return the chicken to the pan; bring to a boil.
- Reduce heat and simmer for 15 minutes until the chicken is no longer pink.
- Remove the cover and increase heat to high; boil until the sauce is slightly reduced.
