Tomato-Pepper Thighs

Ingredients

  • 8 chicken thighs (about 2 lb.)
  • 1 Tbsp. olive or vegetable oil
  • 2 medium onions, cut into thin wedges
  • 1 green pepper, cut into 1 1/2-inch chunks
  • 1 red pepper, cut into 1 1/2-inch chunks
  • 1/2 tsp. red pepper flakes
  • 1 (8 oz.) can stewed tomatoes

Instructions

  1. Remove skin from chicken thighs.
  2. In a medium pan over medium-high heat, brown chicken thighs in oil for 5 minutes, turning once. Remove to a plate.
  3. Add onions, green and red peppers, and red pepper flakes to the drippings in the pan.
  4. Cook over medium heat, stirring frequently, for 5 minutes.
  5. Add stewed tomatoes, black olives, and a pinch of salt to the pan.
  6. Stir the mixture to break up the tomatoes.
  7. Return the chicken to the pan; bring to a boil.
  8. Reduce heat and simmer for 15 minutes until the chicken is no longer pink.
  9. Remove the cover and increase heat to high; boil until the sauce is slightly reduced.
