- Blanch tomatoes in boiling water to skin them
- Put ina bowl cover with the sugar and stand overnight
- Drain juice into a pan and boil to a heavy syrup
- Add tomatoes rind and juice of the lemon and the spice of your choice.
- And cook until quite thick
- Pot it on screw top jars
