Ingredients

  • 450 ripe baby tomatoes
  • 450 grams granulated sugar
  • 1 lemons, juice and rind
  • 1 ground cinnamon or ginger

Instructions

  1. Blanch tomatoes in boiling water to skin them
  2. Put ina bowl cover with the sugar and stand overnight
  3. Drain juice into a pan and boil to a heavy syrup
  4. Add tomatoes rind and juice of the lemon and the spice of your choice.
  5. And cook until quite thick
  6. Pot it on screw top jars
