Tortilla Surprise

Ingredients

  • 1 1/2 lb. boneless pork ribs
  • 1/2 lb. sharp cheese
  • 1/4 c. red wine vinegar
  • 6 soft tortilla shells by Mex America
  • 2 medium red apples
  • sour cream or hot sauce

Instructions

  1. Bake ribs in casserole dish with 1/4 cup vinegar and water to cover at 350° for about 45 minutes, or until done.
  2. Drain liquid; remove all excess fat.
  3. Peel and slice apples into wedges.
  4. Slice cheese.
  5. Roll apple, cheese and pork in a soft tortilla shell by Mex America.
  6. Secure with toothpick.
  7. Bake for about 15 minutes at 350°, or until shell is brown and cheese melts.
  8. Top with sour cream and/or hot sauce.
  9. Garnish can be black olives, peppers or lettuce.
