Tracy Turtles are rich caramel candies layered with crunchy pecans and dipped in smooth semi-sweet chocolate, perfect for satisfying sweet tooth cravings or sharing at gatherings.

Ingredients

  • pecan halves
  • 1 c. evaporated milk
  • 1/4 c. butter
  • 1 c. sugar
  • 1 c. dark corn syrup
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 16 oz. semi-sweet chocolate chips

Instructions

  1. In a small saucepan, heat butter and evaporated milk until the butter is melted.
  2. In a separate 2-quart saucepan, cook sugar, corn syrup, and salt over medium heat until it reaches the firm ball stage (245°) on a candy thermometer.
  3. Slowly stir in the hot milk mixture to prevent the sugar mixture from stopping boiling.
  4. Stir constantly and cook until the candy reaches the firm ball stage again.
  5. Remove the pan from heat and stir in vanilla.
  6. Cool the caramel to room temperature before using.
