A traditional Easter sweet cheese made from goat milk, honey, and eggs, offering a creamy, mildly sweet flavor perfect for festive celebrations and family gatherings.

Ingredients

  • 1 1/2 qt goat milk
  • 12 eggs
  • handful golden raisins (optional)
  • 1/2 to 1 tsp salt
  • 4 Tbsp honey

Instructions

  1. Place a gallon of thickened sour milk on the stove.
  2. Stir constantly and heat until you can press curds of milk together with your hand, approximately 102°F.
  3. Pour the milk into cheesecloth and thoroughly press out the whey.
  4. Put 2 tablespoons of butter in a hot skillet.
  5. Melt the butter, then add the curds, 1 tablespoon of baking soda, and salt (about 1 teaspoon or to taste).
  6. Stir with a potato masher and cook until smooth.
  7. Add cream or milk to achieve the desired thickness.
  8. Pour into a bowl and serve.
