Truro Clam Risotto
Ingredients
- 3 TBs EVOO
- Large Onion - chopped ⓘ
- One pepper - red or orange ⓘ
- 1 C mushrooms - thinly sliced ⓘ
- 1 C arborio rice ⓘ
- 3 C ground or chopped clams
- Liquid - approx 4 C, white wine, clam juice, chicken stock & brandy
- Juice of one lemon & a half tsp of zest
- Red pepper flakes & parm cheese optional - to taste ⓘ
Instructions
- Saute onion, pepper & mushrooms in EVOO for 8 minutes
- Add rice and saute for 3 more minutes
- Add liquid a little at time while simmering for 15 minutes leaving it pretty dry and add clams.
- Simmer for 10 more minutes, add lemon, adjust liquid and season.
