Tuna Niçoise

Ingredients

  • 8 oz pasta bowties
  • 3 tbsp olive oil
  • 5.25 oz green beans, trimmed
  • 2 (7 oz) fresh tuna steaks
  • 2 None red onions, peeled, thinly sliced
  • 2 cloves garlic, minced
  • 4 None plum tomatoes, quartered
  • 8-10 None fresh basil leaves, torn
  • 3.5 oz pitted black olives
  • 3 tbsp balsamic vinegar

Instructions

  1. Cook pasta in boiling salted water with 1 tbsp oil for 8-10 mins, adding green beans for the last 6 mins of cooking. Drain.
  2. Meanwhile, cook tuna in a hot frying pan for 2-3 mins per side, until seared but still pink in the center. Slice. Saute onions and garlic in remaining oil for 4 mins. Add tomatoes and cook for 2 mins. Add pasta, beans, tuna, basil, olives and balsamic vinegar. Season. Serve immediately.
