Ingredients

  • 2 cups sugar
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 1/2 cup corn syrup
  • 2 egg whites

Instructions

  1. Stir sugar into corn syrup, water, and a dash of salt until dissolved.
  2. Bring to a boil and cook to medium ball stage (240°).
  3. Slowly pour one-third of the hot syrup over beaten egg whites, beating constantly.
  4. Cook remaining syrup to very hard ball stage (265°).
  5. Test the syrup for readiness.
  6. Add several drops of the hot syrup to water to test.
  7. Beat the hot syrup into the candy mixture while beating constantly.
  8. Continue beating until the mixture holds its shape from a spoon.
  9. Add 1 teaspoon vanilla and mix well.
  10. Drop spoonfuls onto a greased cookie sheet to cool and set.
