Ingredients

  • 2 eggs, separated
  • 1 whole egg
  • 1/2 cup sugar
  • 2 tablespoons sugar

Instructions

  1. Beat the egg whites until stiff peaks form.
  2. Gradually add 2 tablespoons sugar and continue beating until glossy.
  3. Spread the meringue in a greased and floured cake pan.
  4. Bake in a slow oven (150°C) for about 1 hour until dry.
  5. Meanwhile, combine the 2 egg yolks, 1 whole egg, 1/2 cup sugar, and 1/4 cup water in a saucepan.
  6. Add lemon juice and rind to the mixture.
  7. Cook over hot water until thick. Cool completely.
  8. Once the meringue has cooled, fill half of the shell with whipped topping.
  9. Top with lemon custard and decorate with dollops of whipped cream and strawberry halves.
  10. Refrigerate before serving.
