Vanilla Peach Pie
Ingredients
- 4 pounds ripe peaches, peeled, halved, pitted, each half cut into 6 wedges (about 8 cups) ⓘ
- 1/2 cup plus 1 Tbsp. sugar
- 1/4 cup (packed) gold brown sugar
- 1/4 cup all purpose flour ⓘ
- 1/4 tsp. ground cardamom ⓘ
- 1 vanilla bean, split lengthwise ⓘ
- 2 flaky pie crust disks (see recipe) ⓘ
- Whipping cream (for glaze)
Instructions
- Position rack in lowest third of oven and preheat to 400 degrees.
- Combine peaches, 1/2 cup sugar, brown sugar, flour and cardamom in large bowl.
- Scrape in seeds from vanilla bean; discard bean.
- Toss to blend well.
- Let stand until dry ingredients are moistened, about 15 minutes.
