Ingredients

  • 1 cup uncooked white or brown rice
  • 1 (16 oz.) can black, pink or red beans, undrained
  • 1 (16 oz.) can stewed tomatoes

Instructions

  1. Combine the uncooked rice, undrained beans, and stewed tomatoes in a medium-sized saucepan.
  2. Bring to a boil over medium heat.
  3. Reduce heat to simmer and cook until the rice is tender and most of the liquid is absorbed, about 5 to 20 minutes.
  4. Add vegetables and seasonings to taste, such as onions or bell peppers, if desired.
  5. Serve hot.
