Veggie/Pork Marinade

Ingredients

  • 13 cups Extra Virgin Olive Oil
  • 4 Tablespoons Red Wine Vinegar
  • 4 Tablespoons Lemon Juice
  • 1 whole Serrano Chile-seeded, And Mortared
  • 1 teaspoon Salt
  • 4 cloves Garlic-mortared

Instructions

  1. Use a large plastic zip bag and pour in the oil/vinegar/lemon juice.
  2. Mince the garlic, chop the Serrano, then put them both in the mortar and make into a paste.
  3. Add the salt to the past, and then drop the paste into the bag with a spoon.
  4. Veggies taste great soaked in this marinade: whole mushrooms, asparagus, zucchini, red onion, bell peppers, red potatoes and artichoke hearts.
  5. Pork or chicken are also great in this marinade.
