Ingredients

  • 3 eggs, separated
  • 3 oz. sugar
  • 2 Tbsp. water
  • 2 tsp. gelatin
  • 3 oz. dark chocolate
  • 2 Tbsp. brandy
  • 5 fluid oz. heavy cream, whipped
  • 1 oz. grated chocolate
  • whipped cream

Instructions

  1. Prepare a 5-inch souffle dish with a 2-inch paper collar.
  2. Whisk egg yolks and sugar in a bowl over a pan of hot water until thick and creamy.
  3. Remove from heat; whisk while cooling.
  4. Put the water into a small bowl; sprinkle the gelatin over it and leave to sponge.
  5. Melt the dark chocolate.
  6. In a bowl over hot water, melt the gelatin.
  7. Add the melted gelatin to the egg mixture; mix well.
  8. Add the melted chocolate and brandy; mix again.
  9. Whip the heavy cream lightly and fold into the mixture.
  10. Whisk the egg whites until stiff and fold in carefully.
  11. Pour the mixture into the souffle dish and refrigerate.
  12. Decorate with whipped cream and grated chocolate.
