- Prepare a 5-inch souffle dish with a 2-inch paper collar.
- Whisk egg yolks and sugar in a bowl over a pan of hot water until thick and creamy.
- Remove from heat; whisk while cooling.
- Put the water into a small bowl; sprinkle the gelatin over it and leave to sponge.
- Melt the dark chocolate.
- In a bowl over hot water, melt the gelatin.
- Add the melted gelatin to the egg mixture; mix well.
- Add the melted chocolate and brandy; mix again.
- Whip the heavy cream lightly and fold into the mixture.
- Whisk the egg whites until stiff and fold in carefully.
- Pour the mixture into the souffle dish and refrigerate.
- Decorate with whipped cream and grated chocolate.
