Versatile Chicken

Ingredients

  • 1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
  • 3/4 c. buttermilk
  • 1 Tbsp. instant chicken bouillon
  • 1/2 tsp. oregano
  • 1 c. unsifted flour
  • 1 tsp. paprika
  • 1/4 c. melted butter or margarine

Instructions

  1. In a 1 cup measure, combine buttermilk, bouillon and oregano. Let stand 10 minutes.
  2. Place chicken in a large bowl.
  3. Pour mixture over chicken; toss to coat.
  4. Let stand 30 minutes.
  5. In paper or plastic bag, combine flour and paprika.
  6. Shake each piece of chicken in bag to coat.
  7. Place in a 13 x 9-inch pan.
  8. Drizzle with margarine.
  9. Bake, uncovered, in a preheated 350° oven for 1 hour or until golden.
  10. Makes 4 to 6 servings.
