Versatile Whole Wheat Bread

Ingredients

  • 5 c. warm water
  • 2/3 c. honey (part molasses, 2 Tbsp.)
  • 12 to 13 c. whole wheat flour
  • 2 Tbsp. dry yeast
  • 2 Tbsp. salt
  • 2/3 c. cooking oil
  • 2 eggs (optional)

Instructions

  1. With dough hook combine water, 7 cups of flour and yeast.
  2. Add remaining ingredients and enough flour until dough cleans from side of bowl.
  3. Knead 6 minutes (10 minutes by hand); form loaves and place in pans.
  4. Let rise to near double.
  5. Bake at 350° for 30 to 35 minutes.
  6. If mixed by hand, cover and let rise to double.
  7. Punch down; let rest 15 minutes.
  8. Second rising in bowl makes finer textured bread.
  9. Form loaves and bake.
