Ingredients

  • violets
  • boiling water
  • 1 lemon
  • 1 pkg. Sure-Jell

Instructions

  1. Fill a glass jar with violet blossoms.
  2. Cover the violets with boiling water.
  3. Put the lid on the jar and let the blossoms infuse for 24 hours.
  4. Open the jar and strain the blue infusion, discarding the spent violets.
  5. Measure out 2 cups of the infusion and add the juice of 1 lemon and 1 package of Sure-Jell.
  6. Bring the mixture just to a boil and immediately add sugar.
  7. Bring back to a boil and boil hard for 1 minute.
  8. Pour the hot jelly into sterilized jars or glasses and seal.
