Ingredients

  • 1/2 cup onions, chopped
  • 2 tablespoons butter
  • 2 cups apple juice
  • 1/3 cup water
  • 1/2 teaspoon salt
  • 1 cup rice, uncooked
  • 2 apples, medium, chopped
  • 1 cup celery, sliced
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 teaspoon rum extract

Instructions

  1. Saute onion in butter. Add liquid and salt; bring to the boil. Add rice; cook 20 minutes. Add remaining ingredients and let sit 5 minutes before serving.
