Ingredients

  • 1/2 small watermelon, peeled, seeded and cut into 1-inch chunks
  • 3 Tbsp. confectioners sugar
  • 1 Tbsp. lemon juice
  • 1/4 tsp. salt

Instructions

  1. Blend at low speed 1 cup watermelon chunks with confectioners sugar, lemon juice and salt until mixture is smooth.
  2. Add the remaining watermelon chunks and blend a few seconds longer, until smooth.
  3. Pour mixture into a 9 x 9-inch baking pan; cover with foil and freeze until partially frozen, about 2 hours.
