Watermelon Jam

Ingredients

  • 1 medium watermelon
  • 3 lb. sugar to 6 lb. meat
  • orange juice
  • lemon juice

Instructions

  1. Remove seeds and cut watermelon meat into cubes.
  2. Place in preserving kettle with sugar.
  3. Add orange and lemon juice.
  4. Cook over medium heat, stirring very often to prevent mixture from burning.
  5. Cook jam until it will stay in place when dropped from a teaspoon onto a cool plate.
  6. Pour into jars and seal.
