  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 large tomatoes, chopped

  • 1 (15 oz.) can red kidney beans, rinsed and drained
  • 1 (15 oz.) can white kidney beans, rinsed and drained

Instructions

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add chopped onion and saute for 3 to 4 minutes.
  3. Add minced garlic and saute for 2 more minutes.
  4. Stir in chopped tomatoes, chopped jalapeno peppers or bell pepper, chili powder, cumin, rinsed and drained red kidney beans, rinsed and drained white kidney beans, and dried cilantro if using.
  5. Cover and reduce heat to simmer.
  6. Cook gently for 15 minutes, stirring occasionally.
  7. Serve hot with cornbread or over cooked elbow macaroni.
