Ingredients

  • 1 watermelon (approximately 6 lb.)
  • 3/4 cup slivered mild white onions
  • 1/2 cup minced fresh mint leaves
  • Chili dressing
  • salt

Instructions

  1. Slice the watermelon into 1-inch thick rounds.
  2. Cut rinds from flesh and discard.
  3. Cut flesh into 1-inch cubes and remove seeds. Place cubes in a large bowl.
  4. Add slivered white onions and minced fresh mint leaves.
  5. If made ahead, cover and chill up to 4 hours.
  6. Pour chili dressing over the salad and mix gently.
  7. Add salt to taste.
