Watermelon Preserves

Sweet and tangy watermelon preserves feature tender rind infused with lemon and optional spices, perfect for spreading or garnishing, ideal for summer gatherings and unique desserts.

Ingredients

  • watermelon rind
  • 1 Tbsp. salt
  • 1 qt. water
  • sugar
  • water

Instructions

  1. Pare and cut watermelon rind into pieces 2 inches long and 3/4 inch wide.
  2. Cover the rind with brine made by dissolving 1 tablespoon salt in 1 quart water and let stand overnight.
  3. Drain the rind after soaking.
  4. Cover the rind with water and boil for 10 minutes, then drain.
  5. Prepare a heavy syrup by mixing equal parts sugar and water.
  6. Add 1 thinly sliced lemon to each 3 quarts of rind.
  7. Add whole spices, if desired.
  8. Cook the mixture slowly until the rind is tender and clear.
