Watermelon Preserves

- Pare and cut watermelon rind into pieces 2 inches long and 3/4 inch wide.
- Cover the rind with brine made by dissolving 1 tablespoon salt in 1 quart water and let stand overnight.
- Drain the rind after soaking.
- Cover the rind with water and boil for 10 minutes, then drain.
- Prepare a heavy syrup by mixing equal parts sugar and water.
- Add 1 thinly sliced lemon to each 3 quarts of rind.
- Add whole spices, if desired.
- Cook the mixture slowly until the rind is tender and clear.
