Irish Cabbage Soup

Ingredients

  • 1 medium cabbage, shredded
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and chopped
  • 1 medium onion, chopped
  • 3 cups boiling water
  • 1/2 teaspoon thyme
  • 1 1/2 teaspoons salt
  • 1 bay leaf
  • 1/2 teaspoon pepper

Instructions

  1. Parboil the shredded cabbage in boiling water for about 10 minutes, then drain.
  2. In a separate pot, add potatoes, onions, and carrots to boiling water and cook for 3 minutes.
  3. Add the parboiled cabbage to the potato mixture.
  4. Add thyme, salt, bay leaf, and pepper to the mixture.
  5. Bring to a boil and then reduce to a simmer for 45 minutes or until vegetables are tender.
  6. Add half and half to the soup and heat through without boiling.
  7. Serve hot.
