Irish Cabbage Soup

Instructions
- Parboil the shredded cabbage in boiling water for about 10 minutes, then drain.
- In a separate pot, add potatoes, onions, and carrots to boiling water and cook for 3 minutes.
- Add the parboiled cabbage to the potato mixture.
- Add thyme, salt, bay leaf, and pepper to the mixture.
- Bring to a boil and then reduce to a simmer for 45 minutes or until vegetables are tender.
- Add half and half to the soup and heat through without boiling.
- Serve hot.
