Ingredients

  • 1 quart dry white corn kernels
  • 2 quarts water
  • 1/2 cup slacked lime

Instructions

  1. Dissolve slacked lime in water in a large kettle.
  2. Add dry white corn kernels and boil for 30 minutes or until hulls loosen.
  3. Let stand for 30 minutes.
  4. Wash the corn in cold water until dark tips of kernels are removed.
  5. Rinse again until the water is clean.
  6. Use in Posoli or other recipes.
