Ingredients

  • 1 cup red wine vinegar
  • 15 wax-myrtle leaves
  • 6 red bay leaves
  • 1 3/4 cups extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup Dijon mustard

Instructions

  1. Bring vinegar to a boil; add the wax-myrtle and red bay leaves. Simer 15 to 20 minutes or until mixture is reduced by half. Remove from heat and cool. Strain mixture, discarding solids.
  2. In a blender or food processor, process vinegar mixture with remaining ingredients. Chill.
  3. Note: Nine bay leaves may be substituted for 15 wax-myrtle leaves and six red bay leaves.
