Ingredients

  • 1 c. cooked wild rice
  • 1/2 tsp. salt
  • 3 tsp. baking powder
  • 2 eggs, beaten
  • 1 c. milk
  • 5 Tbsp. melted shortening
  • 1 1/2 c. flour
  • 2 tsp. sugar

Instructions

  1. Beat cooked rice with milk, eggs and shortening.
  2. Sift dry ingredients into batter.
  3. Mix lightly.
  4. Bake in greased muffin cups at 400° for 25 minutes.
