Winter Bruschetta

Ingredients

  • 2 French bread, loaves
  • 1/4 cup olive oil
  • 6 medium tomatoes, chopped, liquid drained
  • 1 cup light mayonnaise
  • 1 cup shredded low fat mozzarella
  • 1 teaspoon minced garlic
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil

Instructions

  1. Cut bread into rounds and brush with olive oil; broil until light golden colour.
  2. Combine next six ingedients in a bowl
  3. Drop by teaspoonful onto bread rounds and broil again until bubbly and cheese is golden brown.
  4. *Notes: If you're a garlic fan, add 1/2 teaspoon more for a big bang of flavour. Also, try changing the type of bread -- maybe a multi-grain or rye!
