Winter Lemon Salad

Ingredients

  • 1 T Extra Virgin Olive Oil
  • Juice of 1-2 Lemons
  • sea salt and cracked pepper
  • 1/2 pound spinach or butter lettuce
  • 1/2 C crumbled feta

Instructions

  1. 1. Wash and toss the greens into a bowl. Squeeze the lemons directly over them, add the oil, salt and pepper. Toss the salad to mix.
  2. 2. Sprinkle the feta on top.
