Winter Melon Soup
Ingredients
- 1 lb winter melon (white gourd) ⓘ
- 1/3 cup ham
- 1 (14 ounce) can chicken broth
- 3 1/2 cups water ⓘ
- 1 inch fresh ginger ⓘ
- 1 green onion ⓘ
- 1 teaspoon sherry wine ⓘ
- 2 teaspoons salt ⓘ
- 2 dried Chinese mushrooms, diced (soak mushrooms in boiling water to cover for 20 minutes, squeeze dry and cut off stems) ⓘ
Instructions
- Remove melon skin and seeds, cut into 1" squares. Slice ham into thin slices. Cook broth, 3 1/2 cups water, ginger, green onion, sherry,mushrooms, and melon for 1 hour. Add ham for 10 minutes. Remove onion and ginger before serving. Serve hot.
